How to Make the Rhubarb Sour

  • Place 2 red maraschino cherries into a shaker and muddle
  • Pour in 25 ml of quail egg white, 30 ml of lemon juice, 15 ml of sugar syrup, 20 ml of rhubarb liqueur and 30 ml of gin
  • Fill the shaker with ice cubes and shake thoroughly
  • Strain into a chilled champagne saucer
