Luke Whearty’s recipe, good for 1000ml: place 100g of cacao in a blender and cover with 1000ml of white rum. Blend gently. Pour the liquid into a rotary distiller and set the speed to 120rpm, and close to the end of the cycle, raise the speed to 150rpm.
