How to Make the Chocolate Ocean
- A 1.5-liter bottle should make enough for about 5 Collins glasses
- Pour 7 oz of honey, 33 oz of still water, and 3 oz of cognac into a blender
- Add 5g of salt, 7 oz of homemade cacao distillate, and 200ml of sake
- Blend gently
- Filter the liquid through cheesecloth into a bottle
- Serve the cocktail in a Collins glass with rocks ice
- Before serving, carbonate the cocktail in a Perlini shaker
- Garnish with a samphire sprig
