Dominic Walsh’s recipe, good for 1000 ml: place 500 g of lemon zest, 500 g of sugar, and 500 g of lemon juice into a plastic bag. Squeeze the air out of the bag and infuse for 12 hours. Then filter the liquid into a separate container.
