How to Make the The Grass by the Sea
- Fill a highball glass to the top with ice cubes
- Place 10 mint leaves, a chopped half of lemon into a shaker and muddle
- Pour in 15 ml of sugar syrup, 15 ml of absinthe and 30 ml of vodka
- Fill the shaker with ice cubes and shake
- Fine strain into the highball glass
- Top up with club soda and stir gently
- Garnish with a mint sprig and a lemon wedge on a cocktail skewer
