How to Make the The Thing
- Place 6 mint leaves into a highball glass
- Fill the highball glass to the top with ice cubes
- Place the pulp of a passion fruit into a shaker
- Pour in 20 ml of honey syrup, 20 ml of apricot liqueur and 40 ml of white rum
- Fill the shaker with ice cubes and shake
- Fine strain into the highball glass
- Top up with club soda and stir gently
- Garnish with a mint sprig and a pineapple leaf
