How to Make the Tiki Margarita
- Rim a champagne saucer with finely-chopped tamarind
- Pour 25 ml of quail egg white, 15 ml of lemon juice, 15 ml of almond syrup and 30 ml of silver tequila into a shaker
- Fill the shaker with ice cubes and shake thoroughly
- Strain into the chilled champagne saucer
- Garnish with a grapefruit wedge
