How to Make the Celery Sour
- Pour 25 ml of quail egg white, 30 ml of lemon juice, 15 ml of pineapple juice, 15 ml of sugar syrup and 50 ml of gin into a shaker
- Add 5 dashes of celery bitters
- Fill the shaker with ice cubes and shake thoroughly
- Strain into a chilled cocktail glass
- Garnish with a stripe of celery
