Cocktail recipe Risueño

• Place 1 pc grapefruit zest, 5 g of rosemary, and 10ml of simple syrup in a shaker
• Pour in 20 ml of lemon juice, 10 ml of quail egg white, and 20 ml of silver tequila
• Add 2 dashes of orange flower water and 60 ml of fino sherry and shake gently without ice
• Fill the shaker with ice cubes and shake one more time
• Strain through a strainer and sieve into a cocktail glass
• Garnish with an orange wheel and a sprig of thyme on a clothespin
