How to Make the Rhubarb Sour
- Place 2 red maraschino cherries into a shaker and muddle
- Pour in 25 ml of quail egg white, 30 ml of lemon juice, 15 ml of sugar syrup, 20 ml of rhubarb liqueur and 30 ml of gin
- Fill the shaker with ice cubes and shake thoroughly
- Strain into a chilled champagne saucer
- Garnish with thin slivers of orange zest
