    • Fill a two-liter jar 3/4 of the way with pitted sweet cherries without tamping
    • Add 200 g of caster sugar, a vanilla pod and top up with cognac
    • Close the jar and leave for 2 weeks
    • The infusion is ready when cherries begin to float
