How to Make the Spiced Tea
- Place a wheel of a lemon grass stalk into a blender and pour in 5 ml of sugar syrup
- Blend and pour the resulting fresh puree through a sieve into a milk pitcher
- Add a cinnamon stick broken in halves, 1 clove, 5 ml of lemon juice, 5 ml of ginger root juice, 30 ml of honey and 150 ml of boiling water
- Stir while heating, but do not bring to the boil
- Fine strain into an irish coffee glass
- Add a pinch of ground nutmeg
- Garnish with a lemon wedge and a stalk of lemon grass
