How to Make the Warm Apple
- Place 1 bar spoon of briar and 150 ml of boiling water into a milk pitcher
- Let it infuse for a few minutes and strain through a sieve
- Add 5 cloves and 1star anise into the milk pitcher
- Pour in 30 ml of lemon juice, 150 ml of freshly brewed briar broth, 20 ml of honey syrup, 10 ml of sugar syrup and 50 ml of calvados
- Stir while heating, but do not bring to the boil
- Garnish with a fan of apple wedges and briar
